With over 40 years of experience, the Souza Lima family cultivates coffee that combines tradition, innovation and exceptional taste. The family is constantly researching new processing and growing methods.
Harvesting takes place selectively between August and November, where ripe coffee berries are picked by hand three to four times during the period. The berries are placed in raffia bags to ensure good ventilation and avoid unwanted fermentation before further processing.
The coffee berries are sorted and pulped without using pressure on the skin, and then the coffee is laid out to dry on cement floors with a covered roof. There, the coffee is dried in thin layers before finally being slowly dried in thicker layers over approximately 15 days.
